Caramel Snow Rolls

Description

Do you love the sensation of caramel and salty Almonds that begin with a crunch and end in a smooth sweet draw?  These little rolls are up your alley.  They are quick to prepare and within 20 minutes, you can have perfect Caramel Snow Rolls in your grasp.

Ingredients

Snow White Caramel

  • ½ Tbl Unsalted Butter
  • 1 TBL Granulated Sugar
  • 2 TBL Whipping Cream
  • 2 TBL Corn Syrup
  • 10 Salted Almonds

Milk Chocolate Shell

  • 4 Oz Milk Chocolate

Preparation

Snow White Caramel

Follow standard melting procedure on a stove top or give this microwave method a try.

1)      In a 2 cup Pyrex bowl, melt unsalted butter first, then add sugar and heat for 30 seconds in microwave to dissolve the granules.

2)      Add whipping cream and return to microwave to a boil.  Halt and add corn syrup.

3)      Microwave the caramel and carefully watch as it boils heavily.  Tip: When the water has boiled off the caramel is ready.  The height of the caramel will drop in half.

4)      To test the caramel, use a fork and dip into the caramel bowl and cover a fork.  Drop a single droplet into a cold bowl of water and if the mixture holds its form, it is ready.  Handle the bowl with a mit to protect hands.

5)      Add Almonds and pour the caramel onto Parchment paper.  Use the parchment paper to roll the mixture into a long cylinder then cut into small sections.

6)      Place pieces into roll mold.

Milk Chocolate

1)      Microwave chocolate on 50% power in 30 second increments until there are lumps.  Then, allow to finish melting in the bowl then pour over caramel.  Tug the mold over the counter to vibrate the caramel and allow chocolate to surround the mold.

2)      Set on counter or refrigerator for 10 minutes and pop out of mold.
