Heavenly Red Velvet Bars

Red Velvet Bottom

  • 2 Eggs
  • 1 Egg Yolk
  • 1/2 Cup Butter
  • ½ Cup Light Brown Sugar Packed
  • ½ Cup Turbinado Sugar
  • 1 Tsp Vanilla
  • 1-1/2 Oz 70% Cocoa Bar Bittersweet Dark
  • 1/8 Tsp Salt
  • 1 Tbsp. Red Food Coloring
  • 1 Tsp Red Wine Vinegar
  • ¾ Cup All Purpose Flour

Middle Melt in Your Mouth Fudge

  • 1-1/2 Oz 70% Cocoa Bar Bittersweet Dark
  • 1 Tsp Coconut Oil
  • ¼ Cup Light Corn Syrup
  • 1 Tsp Vanilla

Topping

  • 8 Strawberries
  • 24 Oz White Chocolate Coating (Any Brand)

Preparation

Red Velvet Bottom

1)      PreHeat oven to 350F.

2)      Line an 8×8” pan with parchment paper.

3)      In a medium size main bowl, microwave butter till it melts and add all 3 sugars then set aside.

4)      In a small bowl, microwave chocolate bar with coconut oil in 30 second increments till it is fully melted.

5)      Reheat butter sugar mix and hand mix till it is uniform.

6)      Separate one egg to acquire the yolk and combine with butter/sugar mix along with 2 additional full eggs.  Mix until even color then add melted chocolate, Red Wine Vinegar, Vanilla and Red food coloring.

7)      Mix Flour and salt together separately in a different bowl.

8)      Add dry ingredients to main bowl and carefully mix till even.

9)      Pour mix into pan and bake for 25 minutes or when a spoon pressed into the red velvet bounces back.

10)  Pull out of the oven and allow to finish cooking to room temperature.

11)  Once cool, pull out the bottom using the parchment paper.  Then use a pizza cutter to slice into 2 x 6” rectangle bars.

12)  Freeze until ready to use.

Middle Melt in your Mouth Fudge

1)      Microwave chocolate bar with coconut oil in 30 second increments till it is fully melted.

2)      Add Light Corn Syrup and stir till even then add Vanilla.

3)      Allow to set until ready to use.

Coating

Microwave white chocolate in 30 second increments till it is fully melted.

Assembly

1)      Remove red velvet strips and line up on parchment paper.

2)      Spoon Fudge onto strips and set a sliced Strawberry on each, then freeze.

3)      Once nearly frozen, use a fork to dribble white chocolate onto the bars.

4)      Allow to set.  Spoon white chocolate onto parchment paper and set bars on top.

5)      Use a clean pizza cutter and cut between the bars and remove them from the paper.
